In honour of the birth of this blog here's a dessert recipe my girls and I simply adore.
FRUIT TOPPED MERINGUE NESTS
For this recipe you will need:
2 egg whites
100g castor sugar
Fruits for topping
Whipped fresh cream or greek yogurt
Put egg whites in a squeaky clean bowl and whisk until they form peaks.
Add a spoonful of sugar and whisk for 15 seconds to combine. Continue until all the sugar has been added. |
The mixture should look glossy and have sitff peaks. Spoon onto parchment lined pans in the shape of a nest.
Bake in a pre-heated oven set to 150 deg C till slightly brown. Lower the temperature to 110 deg C and continue baking for 45 mins or till crisp in the middle.
If you prefer pavlovas feel free to take them out of the oven whilst the centre is still is soft. We prefer them crispy all the way through and they make for better storage, in air-tight containers.
Top with your favourite fruit and cream. We like to enjoy our sweets low-fat so we opted for greek yogurt which has 17% fat. Peach and passionfruit is a fantastic combination.
